Happy Vegan Australia Day! - Recipes, photos and a podcast...

It started with a casual conversation about what on earth a vegan could possibly BBQ on Australia Day and it ended with three men sitting around my dining table, each with a microphone and a new found love for vegan cuisine.

Steve Davis heads up Another Boring Thursday Night in Adelaide. An hour-long show recorded in Adelaide, for Adelaide, but not always about Adelaide, in which Steve, Colin, Brett and Nigel create light conversation under the gaze of Colonel Light. Steve contacted me to ask if I'd like to be part of the Australia Day show and chat about vegan Australia Day cuisine. I jumped at the chance and it soon developed into recording the podcast at my place while I cooked for the lads.

You can hear the podcast here where Steve, Nigel and Brett share their thoughts on each course and we get into the nitty gritty of why I choose to live a vegan lifestyle, what's so wrong with dairy farming and other random topics of lighthearted conversation.

I can't claim all of the recipes as my own but there are links to those I created myself and the others I made from other blogs around the interwebz.

This recipe has been passed down to me by a couple of people who also had it passed on to them, so I'm not entirely sure who to credit for it. Here it is, Kale Chips. The other chips on the plate are store bought veggie chips (bad, I know).

I reckon the best hommus I've tasted is made using the recipe in my Thermomix Everyday Cook Book. To be frank, I don't think it needs to be made in a Thermi, I'm sure you can whip it up with a food processor or even a stab mixer.

The other dip is another Thermomix recipe for guacamole. I like this recipe because it's so quick and easy to make when you're in a rush and have a few avos in your fruit bowl waiting to be used. Again, I reckon your food processor or stab mixer would be fine for this little gem.

If I didn't have my heart set on Rosemary Skewered Marinaded Mushrooms, I would've made Portobello mushroom burgers but I thought that'd be way to much mushroom for a meal. I swapped out the mushroom for a 50g piece of Japanese marinaded tofu and built that baby up. The recipe is here if you fancy making it at home.

I wanted something a bit different for a salad. Not the run of the mill leafy greens, quartered tomato and a God-awful vinaigrette creation, I wanted something I could BBQ. I was rapt when I found this recipe for BBQ'd Avocado with Herb Lebneh Salad because all I had to do to veganise it was switch out the lebneh for coconut yoghurt - simples and deliciouseseseses.

The main dishes were sided with Rosemary Skewered Marinaded Mushrooms. These were possibly the easiest mushroom skewers I've ever made. I was secretly dreading making them because mushroom have a tendency to split when I skewer them and my lack of patience forces me to give up and just sauté them. I reckon the marinade makes these little guys super easy to skewer but make sure you use the woody part of your rosemary bush!

I made a sorbet palate cleaner in between the main course and dessert but forgot to take a photo of it (shame on me, am I even a blogger?). It was a super simple sorbet made in my Thermomix and I reckon this is one recipe you'll need a high powered food processor for.

I just love how insanely easy this Chia Seed Pudding is to make. The texture might take a bit of getting used to if Chia seeds aren't part of your regular diet but once you're there, you simply can't get enough of it. You could easily replace blueberries with any other fruit or even blend some fruit in with the coconut milk for added flavour.

Just as the lads were leaving, I poured a few glasses of port out of our barrel that's been going for about 5 years now (mmmm... port...) and plated up a few of these Vegan, Gluten Free Anzac Biscuits. These guys are super easy to make, they're sugar free and only take 10 minutes in the oven. They're deliciously soft and fluffy - not so cool if you like a chewy Anzac biscuit but I love them!

  2. Hi @Joanne, as one of the podcasters that night I can attest to how magnificent the food was. Yes, I'm an omnivore but Tom inspired me with that menu and I have been doing a vego week as an experiment. Day 7 ends tonight - we have a great, vegan curry coming up with papadums and some excellent sides.
