Escape the cold at The Highway Hotel with their new Winter menu

We were recently invited to The Highway Hotel to taste the new Autumn/Winter menu that Head Chef Damien Fong Lim and Sous Chef Ashley Coad have so thoughtfully put together. Both Damien and Ashley have been working at The Highway for many years, and their passion for curating comforting and delicious meals whilst making the most of South Australian produce is visible throughout their entire menu.

Beetroot and vodka salmon gravlax - $16

We started off our tasting menu with one of The Highway’s more delicate entrées - beetroot and vodka salmon gravlax with candy cane beetroot, pickled shallots, buffalo mozzarella and rosemary and pistachio purée. The slightly firmer texture of the cured salmon was a perfect pair for the soft, fresh buffalo mozzarella. Although a fresh and light entrée, the heartiness of the beetroot flavour and hint of rosemary would make this dish perfect for sharing on a chilly Autumn or Winter evening in the comfort of The Highway’s cosy bistro.

Crumbed beef brisket balls - $15

The second entrée we tried from the bistro menu was an unexpected but incredibly delicious combination of crumbed beef brisket with Massaman curry marinade and kewpie mayonnaise. The slow cooked brisket was tender and fell apart when cut into, and the richness of the meat was so perfectly accompanied by the crunchy crumb and velvety Massaman sauce of cardamom, cinnamon, cloves, star anise and sweet coconut. This would definitely be our pick as the perfect starter to share between a few friends - although prepare to fight over who gets the last bite!

Hot smoked kingfish salad - $24

The Highway Hotel always has a great selection of salads on their bistro menu, regardless of the season. This salad of hot smoked kingfish, rocket, green beans, pear, radish, Spanish onion, potato and creamy dill dressing is an updated version of a similar salad that featured on The Highway's Summer menu, introducing soft Autumnal flavours instead. Like many of The Highway's dishes, the versatility of this salad means it would be perfect as a meal on it's own, or shared between a group alongside some other dishes.

Roasted pork belly with potato gallette - $28

The first main we tried and a real standout on the new menu was The Highway's roasted pork belly with potato gallette, edamame beans, pea purée and jus. The plate arrived at the table and we instantly admired the sophisticated plating of this dish and how crisp and golden both the pork and potato gallette looked. And we weren't disappointed! Melt-in-your-mouth pork belly was matched with superbly crispy skin and a rich, flavoursome jus. The gallette was soft and buttery, but still had great texture, and was a nice change from having a purée or mash on the plate.

Rabbit fricassee tagliatelle - $26

The Highway Bistro has always had a few pasta dishes on their menu, and their recent menu update includes a spaghettini with Spencer Gulf prawns and spaghettini with Brussel sprouts, cauliflower and almonds. However, the pasta we were lucky enough to taste was their tagliatelle with rabbit fricassee, mushrooms, thyme and shallots. Fricassee is a creamy dish made by slow cooking the rabbit in a rich sauce of white wine, cream and thyme. The result is a tender and delicious meat that hasn't dried out one bit. Although quite a dense and rich pasta dish, it was obvious a lot of time and care had been put into it to achieve such a flavoursome sauce - it definitely is not your average pub-pasta!

Bacon wrapped chicken - $26

The last dish of the night was a true classic - bacon wrapped chicken breast with sweet potato and confit garlic purée, roasted balsamic onions, dutch carrots, and a chicken demi glaze sauce. With well cooked chicken and great flavour throughout, this was a really satisfying, hearty and warming dish, absolutely perfect for the cooler months.

Malteaser cheesecake cup - $12

It wouldn't be possible to leave The Highway without trying one of their delicious desserts. One of the three desserts on their Bistro menu is the Malteaser cheesecake cup. With a biscuit crumble base and creamy filling, this cup was just as delicious as it sounds,  and is the perfect dessert to please all ages! The Highway also have a warm apple and rhubarb crumble with Chantilly cream and vanilla ice cream on their winter menu, as well as a cookies and cream trifle.

The Highway's new Autumn/Winter menu for 2019 really does have something for everyone, and it's clear that the talented team of chefs strive to deliver something unique with every dish. Whether you're looking for a new local to enjoy a quick weeknight meal, a beer garden or lounge for a pub classic with friends, or a venue for a special occasion dinner, The Highway is the perfect place to escape the cold this Winter.
