Chia and Coconut Pudding

Chia and Coconut Pudding

Serves 4-6 people

400g can of lite coconut milk + 30ml for serving
1/3 C maple syrup (or your preferred sweetener)
1/2 C chia seeds (black or white, it doesn't matter)
Blueberries to serve
Shredded coconut to serve

Place the coconut milk, maple syrup and chia seeds in a bowl. Stir well to combine. Cover and store in the fridge for four hours or overnight. The mixture will thicken quite quickly. I recommend checking on the mixture after the first two hours and giving it a stir.

Remove from the fridge and divide into four or six bowls or glasses. Top with berries, coconut and coconut milk.

TIP: You can omit some of the sweetener if you blend a a sweet fruit in with the coconut milk. Try bananas, mango or berries.
