Kasutera - Japanese Sponge Cake recipe

A very simple recipe to create a very sweet sponge cake that goes very well with tea or coffee.  Most time consuming part is whisking the ingredients, usually takes 20+ minutes just to whisk it until it becomes thick.
  • Strong (Baker’s flour) flour 190g
  • Sugar 290g
  • Egg 5
  • Milk 5 tbsp
  • Vegtable oil 4 tbsp
  • Honey 3tbsp



Sift flour in to a separate bowl

Put all eggs and half (145g) of the sugar in a big bowl . Whisk until the mixture thickens - usually takes around 20-30 minutes with an electric whisker.

Mix milk, oil, honey and rest of sugar in another bowl



Add the flour and mixture of milk into the egg mixture. Mix everything together very well




Put the mixture in moulds and preheat oven to 160 degrees


Bake for 50~60mins or until center is cooked

Wrap with glad wrap while still warm. 

Leave 1 day/overnight wrapped


*for maccha flavour, add 3tbsp into flour mixture
